Oatmeal Chocolate Chip Cookies

I love cookies.

I grew up making cookies with my mom and sisters, and they are still my most favorite thing to bake.

After graduating from college, I discovered that you could take delicious chocolate chip cookies and blend them with not as delicious oatmeal raisin cookies and make an extraordinary treat.  I don't know how I lived before they entered my life.

I've been making these cookies for friend and family gatherings for the last few years, and every time people rave about how good they are.  I found the recipe below on a website a few years back, and I haven't been able to find the site since. Thankfully, I wrote it down.

Tonight, Brad was gone and I decided to make a batch me for and the baby (so just for me).



The secret to these cookies is to take them out of the oven when they still look a little wet in the center, and then leave them on the pan for a few more minutes. The hot pan will cook them a little longer, but still leave them nice and chewy.

Make these immediately.  You will not regret it.


Chocolate Chip Oatmeal Cookie Recipe

1 1/2 c. brown sugar, packed
1 c. butter, softened
1 tsp. vanilla
1 egg
2 c. old-fashioned oats
1 1/2 c. flour (I use whole wheat pasty flour)
1 tsp. baking soda
1/4 tsp salt
12 oz. chocolate chips

1. Heat oven to 350-degrees.
2. In a large bowl, stir brown sugar and butter until blended.
3.Stir in vanilla and egg until light and fluffy.
4.Stir in oats, flour, baking soda and salt.
5. Stir in chocolate chips.
6. Drop dough by rounded tablespoon-fuls onto ungreased cookie sheet, 2 inches apart.
7. Bake 9 to 11 minutes or until golden brown.
8. Cool slightly; remove from baking sheet to wire rack
